This shelf will produce 70-80lbs of Shitake mushrooms!

A Wild Chestnut Mushroom strain from Queensbury NY

A Wild Chestnut Mushroom strain from Queensbury NY grown from a spore sprint taken from a wild specimen in October 2023.

This is growing on 50/50 soy hulls and sawdust. It sat in incubation for 3 months until it started fruiting inside the bag. Since this bag was a multi- spore culture it grew more slowly. The largest mushroom of this bunch will be cloned and that culture will be used in the future.

We have seen many Pholiota species closely related to Chestnut mushrooms (Pholiota adiposa) growing wild in upstate NY, but this is the closest we’ve found to a true Chestnut mushroom.

The DNA of this mushroom was analyzed by @ohio_mushroom_dna_lab and the sequence for the ITS region can be found iNaturalist, the sighting ID is 187542460.

Hairy Tofu is a traditional Chinese fermented dish

Hairy Tofu is a traditional Chinese fermented dish that is created by growing Mucor species molds on the surface of tofu.

The mold is edible and imparts a cheese like flavor to the tofu.

These hairy tofu cubes can be eaten fresh by deep frying. The mold creates a natural crispy breading on the outside of the tofu.

The Mucor mold also creates enzymes that break down proteins and carbohydrates which can be utilized to make other ferments. Similar to how koji is used. A Chinese style miso, or soy sauce can be made with hairy tofu.

We simply submerged these cubes into a 10% salt brine for 2 months and the result are salty, fermented “miso” cubes. These miso cubes can be mashed and used as traditional miso.

We found oyster mushrooms growing in the Washingto

We found oyster mushrooms growing in the Washington State rainforest.

They were growing high up a tree so a big stick was used to knock a few down.

We saved a spore print and a tissue sample of these and brought them back to New York.

We plan on cultivating these oyster mushrooms on our farm, and sending them to @mossycreekmushrooms for their “Mycologium” project for long term storage.

This Beech Mushroom was wild cloned on the Rush Po

This Beech Mushroom was wild cloned on the Rush Pond trail in Queensbury NY, last October.

Lots of commercial potential for this strain due to how quickly it colonizes substrate and the yield. It has an amazing sweet and nutty flavor with a very soft texture.

This was growing on a 5lb bag of Pine sawdust and Non-gmo soy hulls. Temperature was around 60F during cultivation.

We mistook this for H. ulmarius because we weren’t aware beech mushrooms could grow in our area. The last photo is of spores from this mushroom viewed under a microscope. The round shape of these spores further confirms the identity of this mushroom as Beech. H. ulmarius would have larger oval shaped or ellipsoid shaped spores.

We plan on attempting to cross breed this wild beech with our white beech strain as well to further improve its commercial potential.
